Ill be cooking a lot now that my contagious ass can't take any antivirals, or go to work until I'm scabbed over :-| However tonight, I dont want to cook at all, so I'm trying to figure out what to have DH bring home.
More take out here... I have the flu (although I think I am finally at the tail end of it) and between that and the fatigue.. there is no way I am cooking. I wish though.. home cooked food sounds so much better! We'll probably have burgers or pasta... not sure which yet.
We are in super food mode. Yesterday we made a sweet potato sausage spanish omelette and kale chips.
1) Omelette: slice 2 potatoes thin, sautee in oil till they are soft. Meanwhile cook 2 sweet sausages in a separate pan. Put potatoes in a bowl with 6-7 eggs, let the mixture sit for a few minutes. Then pour mixture into frying pan, add salt & pepper, add sliced sausages, cook till eggs are cooked. You can flip over the pan onto a plate for a professionally looking spanish omelette, but it really doesn't matter if it all breaks apart.
2) kale chips: rip leaves off, put on rimmed cookie sheet, pour some oil over (as much or little as you want, just kind of get them wet) add salt, mix around with your hands and put in the preheated oven at 350, 10-12 minutes

We ordered out.. We haven't gone grocery shopping all week, but at least I've been eating healthy! I can't wait to have some home cooked meals.
