I got a JUMBO bag of kale from an old lady at church last night (perk of being a ministers wife I suppose). I'm making potato soup with kale and have already made kale chips, and there's still half a bag left. Anyone have any good kale recipes?

And I meant the leafy part not keafy. I am in the backseat of a pick up going through rural Arkansas bouncing like crazy.
Beef for stewing
Polish sausage, sliced
2 cans of diced tomatoes
1 onion
Peas
Beef stalk
Potatoes cut into soup sized pieces
Kale! And lots of it!
salt, pepper, garlic, splash of red wine
Just like most soups, cut onion and saut in olive oil, add to giant pot with beef stalk. Brown the beef and throw it in the stalk, add the cans of tomatoes. It's better if you let this simmer for a little while. Then add the potatoes, let them cook for 30 ish minutes. Lastly, add the peas and polish sausage and finally kale. You want the kale to be cooked, but still a nice shade of green.

Get rid of the ribs, cut it into ribbons. Add veg broth, sausage, a host of root vegetables and some celery... Get that!! So good!!
