We started DD on solids on Christmas with roasted Japanese sweet potato and butternut squash sticks. (I tossed them with olive oil and cinnamon and then roasted them in the oven). So far she has also had steamed carrots, steamed broccoli with and without nutritional yeast, pancakes (dairy and gluten free), gluten free pasta, scrambled eggs, avacodo, freeze dried mango sticks (from Trader Joe's) and banana. She still hasn't actually eaten much yet, but I know that it won't be long

Off the top of my head he's had:
Avocado, mango, banana, strawberries, raspberries, kiwi, carrots, sweet potatoes, broccoli, cauliflower, tomato, red pepper, green pepper, whole wheat toast, cheddar cheese, cheese and potato pierogi, homemade lasagna, ravioli, penne, homemade baked macaroni, chicken, turkey, steak, mashed white potatoes, stuffing without celery, grilled cheese, pancakes from scratch, egg.
DS literally eats what I eat. I only give him things that have been homemade, no prepared or frozen foods, except bread and pasta. I use fresh pastas, though. I can honestly say he has tried every single thing I've given him.
ETA: we are 3.5 weeks in
I'd be really interested in other responses to this as well. We've been at it about 3 weeks. I found it very intimidating the first week but it got easier quickly, If you want to try again you still could. We had a lot of gagging for about 10 days but once we realized that he wasn't choking and it wasn't bothering him at all we relaxed and now he hardly ever gags. He's still mostly chewing and spitting out but there is definitely some going down and he's clearly chewing more deliberating and actually trying to swallow.
He's had avocado, roasted sweet potatoes, regular potatoes, parsnips, carrots and acorn squash. Steamed broccoli, thin green beens, asparagus. Broiled zuchini slices, he hated it steamed loved it broiled. Sugar snap peas with the peas removed, Quinoa pancakes (huge hit), plain quinoa with some squash holding it together, oatmeal fingers, sweet potato pancakes (huge hit), pita bread or toast with hummus, toast with applesauce (this was great coveyer of applesauce and he ate a lot without eating much bread). Steak and mashed potatoes at Christmas eve dinner. He sucked on the steak forever and was able to eat the potatoes with his hands.
Fruit has been harder to figure out. He oves pinnapple. My husband makes him teething sticks from the core and those are a huge hit. I am to scared to give him apple though he loves to suck on a whole apple I am eating, bananas so far he can't figure out how to eat. Steamed pears were a fail. We just tried orange slices which he loves but we are pulling back on citrus because we saw a tiny rash, probably unrelated but we'll cut it for a week or two and try again.
It has definitely forced me to the try to eat a little better. I am letting him have some gluten but I haven't done much with meat or eggs. I am never quite sure what should be off limits. We have no allergies in the family and he was EBF for 6 months so I am not too worried but I'd be interested in other opinions or food suggestions.

I just leave out the salt and use whole wheat flour. I'm sure almond milk would sub and I'm sure you have a flour substitute you use.
For the oatmeal, I just used a food processor to grind old-fashioned oatmeal a little but finner (he gagged without this step but I may try again) and then soaked equal amounts oatmeal and milk for a few minutes then microwave it for 2 minutes. It makes a semi-solid cake.
My husband makes the sweet potato pancakes. They are mostly sweet potato and have worked really well for my son. I'll post the recipe later if I remember. Stayed awake with a happy non-sleepy 6 month old pretty much all night, he's still playing happily with no naps. Thank godness I am "resting" at work
