Go to simple healthy meals

Sorry for being a post whore.  

 What are your go to simple, quick healthy meals?   I'm hoping to resort to take out and frozen meals less in 2013! Sorry if there has been a recent thread similar to this.

  • Lots of chicken and salads! We eat a lot of chicken either grilled or roasted. I also love chicken burgers with spinach and feta and grilled eggplant and chicken parm. Yum!

    Me too!  I have LOVED everything I've made from her!  The healthy baked chicken nuggets and chicken parm are 2 faves.  I just recently made the buttermilk chocolate chip scones and OMG I couldn't stop eating!  Cooking light is usually pretty good too, but I feel like they have a lot of ingredients.

  • One of my recent easy (not super quick, because it marinades for about an hour, but you could cut that back if you needed to) is broiled salmon with a tossed salad on the side (I buy the packaged salad, because I am too lazy to actually cut up everything).  I marinade the salmon in a mix of maple syrup (the real stuff), soy sauce (I ran out and had to use a few dashes of fish sauce and some homemade chicken stock), garlic powder and pepper, and stuck it under the broiler until it was cooked through (I had a whole fillet and it took MAYBE 20 minutes - salmon steaks would be faster).

  • Chicken or turkey quesadillas, all natural already cooked chicken meatballs (my kids love these) you find either by the meat counter or with the deli meats- warm in oven.  We also do Trader Joe's frozen turkey meatballs and eat those with sauce and spaghetti.  I buy chicken&mozzarella ravioli from costco that's not frozen.  Grilled cheese and tomato soup, omelets...

  • Thanks all! I have made a few things from skinnytaste but I should do more.  I'm going to look into those cookbooks, Joyfully.  I also like Marlene Koch's cookbooks.  Her baked good are amazing!
  • We like making stir fry a lot. You can do tons of variations and different meats and lots of veggies. It takes about half an hour, depending on how fast you are with chopping. A lot can be done ahead of time, too.

    My favorite is pineapple chicken. Bell peppers, carrots, onions, chicken and a can of pineapple. Use the juice with soy or teriyaki sauce and cornstarch to thicken it.

    Serve it over rice.
