Part of my New Years resolution is to learn how to cook. I basically cook the same 5 things (meatloaf, chicken cutlets, raviolis & meatsauce, Hamburger helper

) You get the idea... My husband is sick of all that & now that I am a SAHM I really would like to be a better cook for DS ! And I would like to cook more vegetables. My first question is do you buy a lot of fresh veggies at once? I dont have the money to be wasteful. Is frozen veggies ok to start with? Do you steam LO's veggies? Do i need to buy a steamer? I tried boiling squash & it fell apart!? Im the worst cook please help! Any suggestions...books, websites, tips are appreciated
Re: help in the kitchen
I personally like frozen veggies when the fresh are not in season. And what I do is I buy fresh veggie that's in season and kind of showcase it. Like Butternut Squash I made a lasanga, and then served in a few other ways as a side.
Now we a Butternut Squashed out so I have to go to Farmer's Market and see what else is in season.
I bought the baby bullet steamer and I've only used it for food for DD, never for myself. I use cooks.com if I have a specific recipe in looking for, and pinterest has a lot of off the wall recipes that are fun to try.
I use a steamer that fits over a pan of boiling water. Squash cooks super fast and goes mushy easily, don't feel bad! If I SAH I would do more fresh veggies, but I only grocery shop weekly so I rely part time on frozen. For fresh I like cauilflower, broccoli, bok choy (stir fry that with bacon, omg YUM) especially. I often google "five ingredients or less healthy easy" and just make something that comes up. I am in a food rut.
Here are my go tos that are easy:
Lawry's chicken - thighs, dipped in oil and lemon juice, sprinkle with seasoning bake (deep pan or broiler pan because they will leach fat)
Chicken parm - dip breasts in beaten egg, bread in bread crumbs and parmesan, place in slow cooker. Cover with 1 jar spaghetti sauce. Top with one bad mozz, one bag parm. 4 hours on high, serve over noodles or veggies.
Cowboy beans: combine canned baked beans with ground beef place in slow cooker. Cook on low all day. Serve with jalepenos and sour cream.
Stir fry is another easy one. Oil in pan. Small cubes of meat. Cook it. Add a sauce if you like (I like panda orange sauce, which works best if you flour the chicken before you cook it, or just teriyaki). Remove from heat, stir fry frozen veggies in same pan, add back in meat, serve over rice.
