I also tend to make most recipes healthier than written by cutting butter and oil down considerably, using low fat milk in place of cream, adding veggies, etc.
I love Ellie Krieger. She is a registered dietician, and she used to have a show on the Food Network. She's got the yummiest recipes. I also have her cookbook. I don't follow her recipes to a 't', but I keep them healthy. Here's a link to her top 100 recipes on the Food Network. My favorites are her chicken pot pie, three bean and beef chili, pasta puttanesca, lasagne rolls, and fried rice.
