The board is slow and I'm thinking ahead to dinner. Please share your favorite dinner ideas and recipes for when the weather is cold and you need some yummy comfort food. Soup recipes are great too! I love making soup.

99% of all recipes I have seen on here are so heavy and usually include both milk and meat. I typically don't mix the both (being Jewish) and have rarely seen any healthy comfort food recipes. Does anyone have some? I would post some of mine, but they are from a cooking class I attend and not from a website

Hmmm...I suppose cream sauces and cream based soups are not the best, then. Yummy, but both heavy and milk/meat. I'll dig through my bookmarked recipes and see what I can find!

Chili doesn't have cream or milk. And you can always make it without the meat! Lemme look through my recipes and see if I can find anything.

I made a quick beef vegetable soup for tonight. Cube, dredge, and brown some beef. Add one yellow onion and a couple chopped carrots. Cook it all down in some broth. Tonight I added corn, peas, a can of petite dice tomato, and some barley. For herbs I added a bay leaf, salt, pep, thyme, and sage. No two soups are ever the same - just whatever is handy and sounds good!
Tomorrow I'm breaking out the new crock pot and making some stuffed bell peppers while I'm at work. If the recipe works out I'll post it. I've never made them in the crock before so I'll save you all the time if it turns out to be a flaming disaster, lol

Easy Enchilada recipe:
1 cup of shredded chicken or 1 cup of beans (or half cup of each)
4 wraps
1 cup plain yogurt (full fat / reduced fat whatever you prefer!)
1 cup salsa or petite chopped tomatoes
1 cup cheese
1 can of cream of chicken soup
Chilli powder to your preference!
Mix yogurt, tomatoes, cheese, chilli powder and soup.
Mix 1 cup of above mix with chicken / beans.
Lay out wraps, divide chicken / bean mix between wraps and roll up
Place in 8X8 baking dish
Cover with remaining sauce
Bake for 40 minutes on 350 degrees
EAT!
