For Christmas eve we are going to a friends house. They are serving Spaghetti and Meatballs. She is an excellent cook and I want to impress. She asked me to bring a salad. What would you put in it? She said not to worry about dressing because they have a ton of different types. Is lettuce, croutons, tomatoes, cheese and onion too plain? I hate cucumbers and olives so I refuse to include them.

I believe so. It has to go with spaghetti and meatballs. And they also mentioned dressing.
This is a recipe used at my wedding that was a huge hit (it has been passed on for two other weddings):
Mixed romaine leaves, can of mandarin oranges, shaved almonds
the vinaegrette is 1/2 cup orange juice 1/4 cup white balsamic vinaigrette, 1/4 cup white sugar, 1/2 cup olive oil, salt and pepper
ETA: I guess this wouldn't be all that great with spaghetti, but you could drop the oranges and orange juice and use olive oil and tomatoes instead.
These ideas are making me want salad right now.

I saw the posted and had to lol, I just finished eating one! Mixed spring greens and baby spinach, frenchs fried onions, garlic croutons, sugar snap peas and julienned carrots. I sometimes throw in bean sprouts a an sunflowers seeds, cheese of some kind, and if I'm ambitious, fruit, either peaches, mangos, pineapple, peeled mandarins or raspberries.
I love dessert, but this is how I normally eat.
Not using iceberg lettuce is enough to impress me! Really, without dressing there's not a lot you can do "fancy-like" besides adding something cooked (like chicken breast) or sliced (peppers, mushrooms). My standard undressed salad is cherry tomatoes, mushrooms, peppers.
Alternatively, nuts and fresh fruit (sliced strawberries and mangoes are YUM), but that's more of a summer thing really.

And then I'd do dried cranberries, sugar snap peas, some pecans (chopped up a bit), maybe real bacon bits, croutons, and I'd pair it with a balsamic vinagrette dressing. YUM. Now I want a salad!
