Bacon wrapped scallops

Bacon wrapped scallops

Anyone make these?  I'm suppose to make them for Saturday.   Do you have a good recipe?  They seem simple enough, but I hate making new things for a special occasion without trying them first.

  • I haven't, but it sounds yummy.  Whenever I've made scallops, I've always made sure that I've both made sure that I cut off the little 'foot' thingie that attaches the meat to the shell because it's tough, and that the scallop is super dry, it makes for better browning.  I'm not sure if that last bit would be beneficial, through.  Let us know how it goes.

  • I don't know about scallops, but I made bacon wrapped asparagus last night with a really tasty glaze of brown sugar, olive oil, and garlic. You could put that on the scallop and bacon combo too for a good caramelization. I would think the bacon would need cooked just a tad before wrapping the scallops, because scallops shouldn't be cooked as long as bacon.

    Good point.  Hell, if it were me, I'd sear off the scallops first, making sure to get that yummy crunchy brown sear on it, then cook the bacon 3/4 of the way and perhaps finish off in the oven?

    I think this is how I'd do it. BTW, thanks a lot Penny now I'm seriously craving bacon wrapped scallops!!
