Every December my cooking club's theme is Elegant Appetizers and Desserts. I'm having a hard time finding an appetizer recipe that is different enough from typical appetizer fare, but still pretty easy. Any suggestions are welcome, thanks!
Buy a wheel of brie, cut it in half like a layer cake so you have two rounds, spread the bottom layer with jam or pesto, then put the other half on top. You can add nuts, if you wish. Serve with fancy crackers or crusty bread.

The easiest app I make and the one EVERYONE requests again and again...
1 block of cream cheese soft and spread on large plate (2 if you want really cream cheesy or have extra large plate), then put on 2 cans of fancy crab meat, followed by a bottle of cocktail sauce... serve with wheat thins to dip. It is SOO good...not the prettiest thing to look at though- people are often scared at first but then can't stay away once they are convinced to try it

Ok Here it is:
1 loaf (1 pound) frozen bread dough, thawed
1 cup shredded mozzarella cheese
1 packet Ranch salad dressing mix
12 slices bacon, cooked and crumbled
2 Tablespoons olive oil, divided
Roll out dough to 1 inch thickness, bruch with 1 tablespoon oil. Cut into 1 inch pieces; place in a large bowl. Add the bacon, dressing mix and remaining oil. Toss to coat
Arrange pieces in a 9x5 inch oval on a greased baking sheet, layering as needed. Cover and let rise in a warm place for 30 minutes or until doubled.
Bake at 350 for 15 minutes. Cover with foil; bake 5-10 more minutes longer or until golden brown.
I always make pinwheels and they are always gone by the end of the night. I make them w/ ham or bacon...

Mush 2 Pilsbury garlic flavored cresent roll triangles into a rectangle (you can do 4 rectangles per big tube)
Spread pepperoni and moz cheese onto each rectangle and roll up as tightly as you can, then slice into wheels (I can usually get 8 per rectangle) *I also will stick the rolled up tube into the freezer for a bit (while I make the others), which makes it easier to slice.
Spread out wheels on cookie sheet and sprinkle with pizza seasoning and bake at 375 until browned (20ish min)
Warning: This is a highly addictive dip and it is always gone quick! Get yourself a plate before it disappears!

8 oz. cream cheese, softened
2 cups shredded cheddar cheese
1 cup mayonnaise
4 oz. diced green chiles
Combine all ingredients, put in a lightly greased (I just use Pam) casserole dish. Bake at 375 for half an hour, until mixture starts to bubble and the top gets golden brown. Serve with tortilla chips.

Using electric mixer, whip 3 blocks of cream cheese until smooth. Set aside. In another bowl, whip 1/2 block of remaining cream cheese with pesto. In a 3rd bowl, whip remaining cream cheese with sun dried tomato paste.
Line the sides of a small circle casserole dish (any shape really, just needs to be deep) with plastic wrap (up the sides with plenty extra, use 2-3 sheets). Spread layer of the plain whipped cream cheese on the bottom. Next layer the pesto mixture on top. Then add another layer of the plain cream cheese. Add the sundried tomato mixture and then finish with the remaining plain cream cheese. There will be 5 layers total. Wrap with remaining plastic wrap and refrigerate overnight. Invert "mold" onto dish and remove plastic wrap. Smooth edges and top with toasted almonds. Serve with crusty bread and/or crackers.

Put the larger rectangles on top and pinch shut with the edges of the bottom dough. Bake about 15-20 minutes, or until the dough is golden brown. Allow to stand a few minutes before you try to move. (I bake mine on silpats so they don't run the risk of sticking.)
I don't know if this classifies as "elegant".. but someone made this dip for our holiday Mother's & More party the other day and it was sooooooo delicious!!! Everyone loved and raved about it so much that she emailed us all the recipe.
Also, it says "spicy" but that's really up to you. She said she made it medium, but I'm very sensitive to spicy foods and I ate it no problem and loved it!

Hot and Spicy Chicken Dip (Buffalo?)
1 large can of chicken - Costco size 6-8 oz of cream cheese (3/4 - 1 brick) 1/2 C shredded cheddar 1/8 - 1/4 C Ranch dressing 1/8 - 1/4 C Frank's Red Hot Tortilla chips
Start with cream cheese in mini crock pot first, then add the rest. Keep stirring every once in a while. Just keep adding stuff till you like the taste. If you use a reg. crock pot, double recipe. It's great reheated too. Always a hit.

Bacon Wrapped Chicken with Jalepeno (the jalepeno heat cooks off so it isn't too hot)
- 3 - 4 chicken breasts
- 1 small jar of sliced jalepenos
- about 25 slices of Applewood smoked bacon (each slice will make 2 rolls, so it depends on how many pieces you get out of each chicken breast.
1. Take the uncooked chicken breast and cut into cubes. Each breast will make about 8-12 cubes.
2. Cut each slice of bacon in half.
3. Place 1 slice of jalepeno on top of 1 cube of chicken. Roll the chicken up with the bacon.
4. Secure the roll with a toothpick and cook on the grill or in the oven.
OMG, I had these once about 4 years ago at a party and have never forgotten them. In fact, my dh asked if I would make them for Thanksgiving dinner! They really are so good. We dipped them in ranch dressing. MMMMM.

My staple app is an antipasto platter- olives, mozzarella, basil, proscuitto, soppresata (or any salami), cherry peppers, tomatoes.
I just put it all on a platter and have a basket of french bread with it.

Yummy chicken dip! I serve with crackers
1 box cream cheese (I use 1/3 less fat kind)
Juice of 1 lime
small yellow onion minced
1 can of chicken, I think the 16 oz. kind ( I get them from sams club)
Shread the chicken, mix with cream cheese and lime and onion. Mix and refrigerate overnight.
Its really yummy!

1 tube pesto paste (pasta aisle)
1 tube sun dried tomato paste
Sliced almonds, toasted
