I'm not a huge fan of sandwiches either. I love taking hummus, vegetables, and crackers. I also like to make large batches of soup, freeze single portions, and then just pull them out the night before I need them for lunch so they can defrost and be ready for the next day's lunch. As long as you have a microwave, you're good!
I like the soup idea! I need to take a day off just to getting my food organized.
I used to take soup every day to work. There are so many different kinds so you aren't stuck eating the exact same thing every day, it's filling, and I ended up losing a couple lbs after awhile which is a nice bonus Now a days I get free meals at work so I don't take lunch, but for DH I try to make extra servings for dinner and he takes the leftovers for lunch so he's always eating something new. You could also try the Lean Cuisine or Weight Watchers frozen dinners, they aren't as bad for you as the regular ones.
I am so lazy when it comes to making my lunch, I put some fruit in my bag with a jar of peanut butter and a jar of honey and a couple slices of bread. I make my sandwich at lunch time. I dont like the honey to be all soaked into the bread lol.

*Pinwheels, are refreshing and easy. I try to add a lot of extras, like cucumber, spinach, tomatoes, etc. Changing up the meat with the veggies helps a lot. It keeps it different. I also change up the wrap. I mix low fat cream cheese with powdered ranch seasonings for the spread.
*Spinach salads (I don;t care for lettuces) are favorite of mine too. Mix up the toppings. Turkey and dried cranberries with almonds is one of my favorites. Strawberries and chicken with cashews. Bacon and turkey with a strong cheese. DH likes to take soups in the winter.
*One of his favorite lunches is chicken salads. (I use left overs from baked chicken.) Low fat mayo (very little), onion, celery(or celery seed if I don't have celery), garlic, salt and pepper. If I have left over herbs I have been known to throw those in too.
*Whole wheat pasta salads are a huge hit around here, too. I typically use left overs for this too. I use left over chicken or deli meats, whole wheat pasta, raw veggies left over.(Broccoli, carrots, bell peppers, tomatoes, cucumber, etc,) I use leftover vinegar oil dressings. (I mix olive oil and vinegar with a splash of water, garlic, pepper, and any herb I have laying around or dried at the time)
*Left over spaghetti becomes baked spaghetti. After dinner I sprinkle it with cheese and toss it in the oven. After it's cooled I put it in lunch containers for the next week. Allie loves this. I heat it before she goes to school and put it in a thermos.
I eyeball everything and don't have exact recipes, but I am sure you can find them if you look online.
