I love Monday Menu -- and my nauseau is finally starting to get better (knock on wood!) So I'm hoping I can do more regular menu planning after taking a hiatus!
Here's this week:
Monday: Beef, asparagus & portobello stir-fry Tuesday: Hungarian mushroom soup w/sandwiches Wednesday: BLT's & baked beans. (Still need to figure out another side to serve -- will likely raid the pantry) Thursday: Holiday Dinner Date Night!-- DS & babysitter will probably eat mac & cheese Friday: Going out for Pizza for co-worker's going away.
Tomorrow - stuffed pepper soup in the crockpot with salad and maybe beer bread
Do you have a link/recipe you can share for your stuffed pepper soup? This sounds like something my DH would enjoy! (Do you know if it freezes well?)

The recipe I have is a page ripped out of Yankee magazine or something, but I just googled, and this looks like almost the same recipe with some of the proportions a little different. I've never made it, so I have no idea if it freezes well, but I don't see why not. Don't most soups freeze pretty well? It'll be in my crock pot tomorrow, so I can let you know by Wednesday how it is.

I have exams til Wednesday so DH has decided to make dinner tonight through Wednesday! Woo! Which probably means it will be steak and mashed potatoes then pizza then something grilled.
Thursday: Polenta with Bolognesse. I've been making this almost every week because DH and DS love it so much. It's DS's favorite dinner by far.
Friday: Chili and cornbread
Saturday: Spaghetti and meatballs with garlic bread
Sunday: Beef stew with bread and some wine for me and Daddy

Here is my plan for the week:
Mon - chicken, broccoli, noodle casserole
Tues - pasta fagiole (this was on last weeks menu, but last minute I realized we didn't have everything and just made spaghetti)
Wed - chicken stir fry
Thur - breakfast for dinner
Fri - French dips with homemade sweet potatoe fries
Tonight - baked ziti out of my freezer and salad
Tomorrow - stuffed pepper soup in the crockpot with salad and maybe beer bread
Wednesday and Thursday - leftovers of both of the above
Friday - clean out the fridge - grilled sandwiches? more leftovers? maybe take out?

Tues: chicken breasts with a white wine butter sauce, toasted tomatoes, goat cheese, and basil; Cesar salad, and garlic whipped potatoes.
Wed: BBQ pulled pork sandwiches on crusty bread, baked beans, and cranberry compote.
Thursday: Bobby's goulash, mixed green salad and melon medley
Fri: homemade Stromboli : pepperoni, pineapple, cream cheese, jalapeos, and red onion for me! Mixed salad with strawberries and almonds.
Sat: going out
Sunday: country fried steak, mashed potatoes, corn, cucumber salad, white gravy biscuits, and carrot cake for dessert.
