I didn't make LO's (I don't have that much talent) but if I did I definitely would have made the cake the night before and had everything prepped and ready to go to ice it the morning of. If you are in an area that isn't warm, you could do the icing in the morning even if you are having the party in the afternoon.
I made DD's the day before and it turned out just fine. After the fondant and everything was on I just let it sit on the table overnight....no fridge. Good Luck!!
I made one for DD1's first birthday (and her second, but I don't want to talk about it). I made it the night before the party. I wanted time to get a replacement if needed.
I did a Mickey Mouse for DD1's 3rd this year and made it the day before, icing and all-- turned out well. For DD2's 1st I did a giant cupcake in a chocolate shell with pudding in the middle, made it the night before, refrigerated and brought in a cooler to my sister's house-- turned out well.

I did a basic round vanilla cake for DD and make the cake 2 days before. I think sealed it in an airtight container. It was iced the day of. I continued to eat the leftovers for a few days afterwards and it never went stale (I was concened about making to too far ahead of time).

I made two cakes- the one on his actual birthday I made the night before (a basic cake with cute candles, nothing too elaborate). The one I planned to make on his actual party was a cute elaborate animal that I found online, but ended up requiring fancy baking equipment that I did not own so I was going to a grocery store at 9 pm the day after Thanksgiving, the night before the party, buying one. My two cents, plan ahead, LOL
