DH and I settled on a name quite quickly. Declan was at the top of my list. I thought it was unusual enough while still being classic, because it is a traditional Irish name. When DH said he liked the name too, I thought it was settled. Now I am not so sure. I am not Irish and neither is my husband. Should we really be picking an Irish name? Also, as a FTM, does this set a precedent for our future kids names? Will they all need to be Irish sounding?

Declan is actually growing in popularity, so I don't think it will be as unusual sounding as you think. Which in this case, isn't necessarily a bad thing. You definitely don't need to be Irish to use an Irish name, and it doesn't lock you into Irish names for future kids either.
My name is a flower name that is iconic of Scotland, and we are definitely not Scottish whatsoever. My brother's name is of French origin and our names don't sound strange together.
Personally, I like the name, and I think if you both like it and agree on it, the other things aren't really concerns.
