dairy free moms..

I can't be the only one struggling with this, can we all join together and support each other.. maybe a weekly check in? share some recipes, ideas and food discoveries?

I'm desperately in need of a butter replacement. gross, I know, but I can only eat veggies with butter on them, and lets face it I need to eat veggies.  

anyone else seriously lacking something? or feel like sharing anything?

  • The two best butter replacements I've found:

    Ghee, which is actually derived from butter. it is unsalted so you'll have to add that, but the flavor is amazing. It contains absolutely no milk protein (casein) or lactose. It is shelf stable and found generally with Indian food.

     Earth Balance. It is with other butter/margarine like things in the cooler section . It comes in a tub or sticks. It tastes pretty buttery.

    Actually, I've been meaning to work on some dairy free lactation cookies. I'm sure there is a recipe for this already, I just haven't googled it... off to google

    And I just use olive oil like it is going out of style on veggies. Part of my problem is that I wont eat anything that isn't "whole" so butter substitutes are out. It makes being a nearly vegan (will still eat eggs and honey) not so fun. Oh, and I'm worried about my supply. I'm trying to take in as much fat as possible now that dairy is out (I can't believe how much ice cream and cheese I was eating!?!?!!!).

    try getting some extra fat from nuts? I made a home made trail mix with peanuts, raisins, cahews and chex cereal the other day that came out pretty good and is easy to grab on the go.  

    I also bought orange juice with calcium and vitamin D to replace milk

    thanks terri I will look into those! trying to figure out if it makes sense to just replace all the butter in the house, or make separate dishes for myself.

  • Kristy: Check out Ghee. Look it up. It is real food. You won't be disappointed.

    The closest thing to cheese I found that I liked was daiya brand. If it was mixed with other flavors it wasn't bad. Even better as a sauce, actually, is cashew sauce.

    The best dairy free macaroni and cheese is actually gluten free as well: Namaste Say Cheez. It is yummy. I put tuna and peas or something like that in it and have an easy meal.

    Luna  and Larry Coconut ice cream is pricey but oh so good. Especially the chocolate. It is coconut and chocolate! Yum!

    As for as straight-up milk to drink? I haven't found any. However, I'm good with soy or almond for cereal and pretty much anything else. They work the same. Coconut too in some things (Like coconut milk with cocoa krispies...seeing a trend?). Hemp milk is great for cooking/baking with. You can make "buttermilk" by taking 1c of other milk, whisk 1T apple cider vinegar or lemon juice in. Add 1t salt and whisk again. Voila!

    I'll add more stuff as I think of it. I'm so lucky that I haven't had to cut anything else out for DD (I already can't eat gluten or much egg for myself), but I went through the ringer with DS and food issues. If you have any specific substitution questions, just ask and if I have an idea I'll tell you. I'll try to check this thread but PM me anytime as well (but page...I'm bad about remembering to check PMs).

  • At first I went TED, then I felt like that wasn't a good idea when I dropped some lbs so quickly so I added everything back in except for MSPI stuff, peanuts for now, just put coffee back in this am, and... I think that's it. So I'm off dairy and peanuts I guess. I'll try them after a few days of coffee. I think it's totally a dairy thing but I figured since I took it all away, I might as well add it back in one at a time just to make sure.

    And yes, I just need to get some trail mix stuff. There is this one mix of almonds and dark chocolate that I LOVE from Trader Joes.

    Oh, are ya'll doing dark chocolate?

    Just FYI, dark leafy greens have more calcium than dairy :]

    When I need butter I use Earth Balance.

    I never ever drank milk as a beverage so all plant based milks are fine for me for the other uses I need.

  • Ditto to a lot of what Terri & Tags recommended.  I use Earth Balance for butter substitute and have even used it to make cookies.  I too have struggled, a lot, with this.  I make double meals all the time, but try to make a meal I can alter.  i.e. Taco night & I skip the cheese/sour cream. 

    Almond milk also has a lot of calcium.  Though I was an avid skim milk drinker and haven't found anything that satisfies that taste for me.  I have been dairy free for 12 weeks and it still isn't easy, but it's easier.  I never thought I'd make it a month.  That said, I may be giving up in 2 weeks if I can't pump enough for DS at work.

    Oreos are my go-to chocolate craving and sandwiches are always an easy lunch (though I had to switch breads because it had milk in it).

  • Lurker here... okay I'll introduce myself. DS was born 9.24. We've been dealing with MSPI for 7 weeks. His dr had us give him a couple oz of alimentum/day because he wasn't gaining - it  hurt too much to eat. I think that was part of the problem. He got scoped from both ends on Tuesday, and I'm on a TED while he gets Elecare for a few days because DH fed me tuna. Yes... a lot of canned tuna has soy. It turns out I'm the only one who can read labels in our house!

    Anyway, I really like rice milk to cook with/use in cereal or oatmeal, and Earth Balance butter. They have a soy free version that we use. Also, Enjoy Life has chocolate chips that are good. Galaxy Nutritional Foods has a vegan mozzarella that is good in eggs, mac and cheese etc... and nutritional yeast can be made into a cheese sauce. I'm not sure where everyone lives - maybe living in Madison with all these tree huggers makes it easier to find food Wink

     

  • Holly: It is so much easier to replace for everyone. It becomes less annoying for you. You can keep the "normal" options around for items that have nothing to do with you (like butter on toast), but for dishes? yeah. Replace that shiz.

    Pfeilele: I don't live in Madison anymore. I have just failed at figuring out how to change my location.  I buy stuff online if I can't find it in stores. OH GOD I forgot about Nutritional Yeast. YUM!

    FYI: If you like Sbux lattes, I think them made with soy milk makes them tastier anyway. I still get them like that generally.

  • We use Earth Balance and Brummel & Brown. Both are dairy free and taste pretty close to real butter. 

    I am not 100% dairy free, but I have been cutting it back majorly. Check out some Vegan Blogs for good recipes and treats.  You can also see what they substitute for dairy and eggs. I personally love Peas & Thank You and Oh She Glows (though her blog has gotten boring since she started writing her cookbook earlier this year - her recipe archives should be helpful).
