Any Americans out there who had a birth abroad... How did you go about filing for a SS# for your LO? Do you have any good resources, or will this be taken care of when DH and I have to take her to the consulate to try and get her passports?
It's done at the consulate the same time as the passports. For us, we had to hand in the paperwork to register the birth abroad of an American citizen, then when that was over we had to walk down the hall to the little SS window. They said they would send it to us as soon as her registration had gone through. It took less than 2 weeks total.

just one tip, in many places you cant bring any kind of bag, stroller or water into the waiting room. this caused a lot of problems for us when we went so make sure you check the rules and plan ahead.
