I've done a ton of research over the years and feel like a crib mattress is one of the more important things you can invest in. I really like the Naturepedic line, and have bought one for each of my kids. They are expensive ($200-$400 depending on which you get) but I can't recommend them enough. They are very high quality, and the safest mattress you can purchase. I have the Ultra 252 coil ones.

We've aimed for around $100-150. I bought the LA baby organic cotton/coconut core for ~130. I was specifically looking for a non-vinyl surface. Of course, I had to get a waterproof cover which added another $30.
With DS #1, we spent 150 on a mattress and ended up switching it with the $50 one from my moms house that came free with her crib because he slept so much better on it. I don't think you need to spend a lot, just make sure it can be wiped off easily and is lightweight.

My girls are not here yet, but so far, I am very pleased. I even wrote a review on Amazon and I never do that.

I would def go organic, you do not want your baby inhaling those nasty chemicals that matresses off gas. Research it, its pretty scary.....they spray them with flame retardants. Its worth the extra cash

i have lullaby earth crib mattress..it is extremely light weight and good..feels a little plasticky though
