I feel like I'm not giving cooper the healthiest solids and I feel bad. He usually eats what we do for dinner we are far from super healthy eaters or a gerber toddler meal. We have almost completely stopped pured foods except for at the sitters. Just trying to use what we have left. Any suggestions for easy healthy meals? Anyone else as lazy as me and feeding the gerber meals?

It may be worth looking at other brands. I stay away from Gerber after reading the labels. There are a ton of chemicals listed in the cintents. Maybe you could find a more natural similar brand?
When I am not feeling it I make DD an egg and toast and banana. It covers her food groupa ans takes next to no time to prepare. I also keep some cooked pasta n the fridge so I can toss it in a frying pan with tomatos and other veggies/whatever I find in the fridge, and she loves it!
I find trying to figure out an easy protein to be the most difficult.
I give JB what we have as well. When it is something that I'm not comfortable giving him I try to give him a "prepared meal" that I made in bulk earlier. I like to make soup that I can portion and heat up or I will make couscous mixed with veggies and chicken, things like that. It's cheap to make a large amount, and it will last maybe 5 days depending on what it is.
Also if we are making chicken with something inappropriate on it I will make part of the meal "plain" while making the rest of our meal how we like it.
