Should I prebake my pie crust?

Tomorrow I'm making the pumpkin pie for Thanksgiving dinner. I'm making the pie crust and filling from scratch. I'm having a complete brain fart - do I prebake the crust before I fill it with the pumpkiny goodness? Or do I just put the crust in the pie plate and fill it up?

Normally, this isn't an issue during the rest of the year, but I think I'm psyching myself out over Thanksgiving dinner, especially since pumpkin pie is my favorite part!

Re: Should I prebake my pie crust?

  • Do NOT bake the pie crust first. You always bake them together. When you make the pie crust, you use cold water...a "secret" that my grandma taught me was use 2 tablespoons cold water and 3 tablespoons vinegar. The vinegar gives you a more flaky crust. Good Luck! I LOVE this time of year cause I absolutely LOVE baking!

  • Thanks, ALane. That's what I thought, but I think I was thinking too hard about it. Smile
  • You're welcome! I make the same apple pie like 10 times a year and I always have to triple check the recipe!
