In both our homes, the gate at the top of the stairs, that we put into dry wall anchors has come out of the wall.
We cannot do a pressure mounted gate bc of a weird stair situation that is difficult to explain, but basically if we did a pressure mounted gate the bottom bar would be floating, unable to lay on the stair.
Anyone have any advice? Or if you had a similar situation, how did you remedy it?

You have to find a stud to anchor it into. All the gates I had like that stated that in the instructions (which is usually the difference between top of stair gates and pressure mounted, it has to be secured). If you don't have a stud in a good place used butterfly anchors (like you use to bolt high weight load shelves) or metal high weight anchors, not the plastic drywall anchors.
