Ok so I am confused, what exactly are you guys using for mattress pads/sheets etc. We have a "waterproof" crib mattress that has the plastic cover on it (vs our mattress that is fabric) on top of that we put a flannel crib pad (flat one) and then the sheet. My sister is saying that we need a mattress protector in between the mattress and crib pad ... but then what is the point of the crib pad? Ugh... help.

I have an enclosure mattress cover-protector plastic helps keep down on allergens and keeps grossness from getting to mattress.
A mattress pad that I believe is water proof
then the sheet.
The problem with most if not all "waterproof" mattress pads is the top mattress portion is the only part that's waterproof not the sides. trust me you want coverage for sides. Our LO has puke mutliple times near the side rails of her crib only to have the spit up/vomit slide down the edge had we not had enclosed mattress cover it would have gotten on the mattress yuck!
We also have an "ultimate crib sheet" that is waterproof and goes on top of the regular crib sheet (secures to sides of crib with elastic straps), which we only used about 2 times when LO was sick - it was super easy to pull that off and have a clean bed underneath. Honestly, the ultimate crib sheet was a waste of money, and we definitely could have done without.
