I double the liquids, and what make it Chinese is that I add a healthy dose at least a teaspoon of Chinese 5 Spice powder. But I keep the fish sauce, so I guess it's sort of fusion, haha. And anyone else, I think I've posted before, DON'T LET THE FISH SAUCE SCARE YOU OFF. It really only adds a nice saltiness and depth of flavor. The end result is NOT fishy. I swear. I also use half sesame/ half canola instead of all canola oil.
IMO, cooking chicken all day in the crock pot does produce a tender, falling off the bone result, but it also usually dries out. I would do these covered in the oven at low temp, like 325, for about 3 hours going forward. Or cook on low in the crock pot, but no more than 4 to 5 hours. And check the meat after 4 hours.
