I finally found my oatmeal recipe. I have always hated oatmeal, but wanted to like it because it is cheap, warm, and filling. I make it for the kids frequently but DD has started refusing anything but cold cereal.
I have made this twice now and it is SO GOOD. When DD woke up this morning it was in the oven and she demanded that I give her the cookies I am clearly hiding from her. It is a great way to use up leftover canned pumpkin too. It's not mushy and gooey like regular oatmeal, it is more firm. Also, it says the peanut butter is optional but it is not. Do it.

Crystal, you're a genius. I've got an impromptu Halloween party tonight so maybe I'll do this and hand it out to the kids. You could even use raisins to make a Jack-o-Lantern face.
I probably wouldn't broil muffin liners. We have some regular soup bowls that are ceramic and they are ovensafe to 450, so I used those. Someone told me that there are ramekins at the Target dollar spot right now. I keep meaning to grab some.
This is how I know I'm old. My girlfriends and I discuss where to get the best prices on ramekins.
I made them already! A dozen in muffin tins took the full 20 minutes but didn't need the broiler because they were already crispy on top. I didn't try the raisins yet but they'll have to go on before baking. They're firm and you can take them right out of the tin and eat. L finished one which I slipped some spinach into and I ate the rest so now I have to make another batch. May try banana, too.
My LO likes green stuff so I just left in fairly large pieces. You couldn't even taste the difference.
