I've got "Thanksgiving dinner" in my crockpot for tonight...a layer of frozen veggies (beans, carrots and peas), top with 3 pieces of chicken (about a pound and a half), top with a can of cream of chicken soup and then top that with some pre-made stuffing. cook for 8 hours on low. Mmmmmmmm.
Don't know what it's called Thanksgiving dinner if it's chicken, but there ya go ![]()

That sounds good! Silly question, but you prepare the stuffing according to the package first right? Then you put in on the chicken in the crock pot? I need to make this!
I think tonight we'll have bean and spinach quesadillas. C's not been feeling well lately but hope he's better now. Still, he'll usually eat this if I give him enough guac to dip in!

I got B to try some last night so I consider it a raging success in our house.

Can you share? I've been wanting to make chicken pot pie for a while now.

Sure!!! Here is the recipe from the blog:
Ingredients
- 1 or 2 boneless, skinless chicken breasts
- .5 of a 1lb package of mixed vegetables
- 1 can of diced potatoes
- 2 cans of Campbells cream of chicken soup (I use the 98% fat free kind)
- 1 refrigerated pie crust
Directions
*Mix soup, vegetables and potatoes together in a pie plate
*Dice the chicken into small pieces. Add to the soup mixture.
*Roll out the pie crust, spread on top of the pie plate, and cut a few slits in top for the steam to escape
*Bake in a preheated 350 degree oven for one hour. Take the pie out to cool for about 15 minutes. Dig in and enjoy!
*Tip: I bake my pie on a cookie sheet lined with foil. Sometimes it leaks, and this prevents a mess in the oven.
I will let you know how it turns out but the blogger is a friend and she raves about it. And it seems really easy. I just have to remember to take the crust out of the fridge a few hours prior to baking.

Trying that probably tomorrow! It sounds yummy! On Wednesdays we eat at church so it's whatever the ladies are cooking for tonight. Last night it was turkey melts and sweet potato fries.

mh was off today so we went to ruby tuesday b/c we had a coupon.
We had chicken tortilla soup and corn bread.
I did this freezer meal work shop on Sunday ad made 10 meals, it was pretty cool. We made one of the meals (crock pot shredded chicken quesadillas) Tuesday and used the left overs to make the tortilla soup. It was much better as soup.
