Like how many seconds or even minutes would you say they need be able to sit up without assistance before I can really say she's sitting unassisted? I think she's at about 7 seconds before she starts to slump over or to the side lol

I would say several minutes. My LO now sits for awhile, I'd say up to 20 minutes playing with toys. I put a pillow behind her because if she gets too excited about something she will fall over but not that often.
Sitting unassisted for a long period is a 6ish month skill, can be up to 8-9 months also.
My daughter is not interested in rolling either! I'm glad to hear that your LO isn't either.
As for sitting, she'll sit for a couple of seconds but then will topple over. She does great with the boppy so I'm guessing it won't be long before she's got it down.
