Title: S/O Slow Cooker
Our slow cooker & I are going to be BFF's this fall/winter - between working full time & two kids, I have limited amount of time to get dinner on the table. So - do you ladies have any tried & true recipes you'd like to share?

Italian chicken :
Put chicken breast in crockpot with big bottle of Italian dressing and half a cup of water. Let it go on low for 6-8 hrs

This is one of my go to recipes for chicken tortilla soup. To make it easier you can use frozen chicken breasts and instead of adding all the spices I just use a packet of taco seasoning.

A fatty cut of pork, cubed i get it at Food City, it's labeled "pork for carnitas", put in the cooker.
Add some chopped onion, minced garlic, orange juice maybe 1/2 3/4 cup, and water to almost cover. Sprinkle with salt, pepper, cumin and a little dried thyme.
Cook on high for about four hours, low for maybe six.
After the pork is falling apart, shred and remove the fat. Put the pork with most of the drippings/juice into a skillet and cook on high until the pan is dry and continue to cook until the meat is slightly crispy.
I serve in a corn tortilla with guacamole avocado, onion, tomato, cilantro, salt, and lemon and lemon juice. Rice/beans on the side.
This recipe is super easy prep but kind of a lot to get it with with sides into the plate. But, it's so worth the work. : Sorry it's not too precise, but I make things up so I don't have recipes.

I haven't tried any of the recipes yet. I think it's one day of cooking and you freeze everything and then thaw the night before you want to eat it and put in the crock pot the morning of.
