Slightly Healthy Cookie Recipe?

I'm sending cookies to daycare for Charlie's birthday next week, but don't want to sugar up a room full of toddlers for their poor teacher. LOL A parent recently brought cupcakes for a birthday....for a room of 2 and 3 year olds. Dude, that's just mean.

Anyone have a yummy, but slightly less sugary recipe for cookies?

  • I made some low sugar cookies, gave 1 to J. He was so excited "cookie, cookie, COOKIE!" Took 1 bite, handed it back and said "cracker"
    So you probably don't want that recipe.

  • You can make chocolate "cupcakes" with chocolate cake mix and pumpkin. I think it's a WW recipe.  They are really delicious! I guess they would still be sugary because they are using the cake mix, but you don't frost them, which to me is where most of the sugar in cupcakes comes from anyway.

  • No advice, but holy cow! Charlie is turning 2 next week! I think I'm just going to have to get used to being shocked by C's early birthday (and the fact that it means our babies' birthdays are also right around the corner!)

  • Parents magazine had a yummy-sounding pumpkin cookie recipe this month.  Sorry I can't post it but am at work.  At our DC though, we are only allowed to bring pre-packaged goodies b/c of the food allergies (my kid included) so cupcakes are actually the norm.  Parents usually just bring the mini ones though (thank goodness!) from Publix or Target.

  • Thanks for the ideas, ladies. :) If we go the pumpkin route, I think DH is going to have to make them. Pureed pumpkin and the m/s don't mix!! lol

    And yes, I can't believe I'm planning C's 2nd birthday either. Time needs to slow the heck down.
