My nana brought me 1/2 a peck of mountain apples (pink lady) and MIL is bringing us another 1/2 peck Thursday. I need to figure out how to use them all. I'd recently made Carmel apple muffins,and Carmel apple brownie cheesecake. Looking for new recipes,any favorites you'd like to share?

Apple Pie in a Goblet- I love this recipe. It's really quick and easy.
Prep: 10 min. Cook: 25 min. Yield: 4 Servings 10 25 35 Ingredients 3 large tart apples, peeled and chopped 1/4 cup sugar 1/4 cup water 3/4 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 12 shortbread cookies, crushed 2 cups vanilla ice cream Whipped cream Directions In a large saucepan, combine the apples, sugar, water, cinnamon and nutmeg. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until apples are tender. Uncover; cook 9-11 minutes longer or until most of the liquid has evaporated. Remove from the heat. In each of four goblets or parfait glasses, layer 1 tablespoon cookie crumbs, the ice cream and the apple mixture. Top with remaining cookie crumbs and whipped cream. Serve immediately. Yield: 4 servings. I also like to make applesauce, apple crisp, apple stuffed pancakes and baked apples. edit: You can use just the apple portion of the recipes above and pour it on waffles too.I know you just made muffins, but I just made these. Big hit!
