Looking to get my little guy into a convertible seat in the very near future, he still fits the infant bucket, but is just getting unbearably heavy to carry around and only has a few pounds to go before he needs switching anyway.
I'm wondering what seat other Mazda CX7 drivers have found to be a good fit in their cars, I'd like to do a center install as long as possible and have leather seats

Manual doesn't recommend a position, just states that it is permitted to use the LATCH anchors for a center install
I have a CX7 and have the Marathon rf behind the passenger seat. The CX7 is known for having a small backseat. The passenger seat is almost too close to the dash for comfort for me at 5'9 but not bad. It is too close for my 6'2 husband to ride any long distance in the passenger seat. I have a rf infant seat behind the driver. I was really worried that I wouldn't be able to get two rf seats in the CX7 but am very happy it worked out.
I suggest going to the store and trying them out in your car.
We've got a First Years True Fit behind the driver (in more of the upright vs recline setting on the carseat) and an infant seat behind the passenger side. Honestly, it was easier when the TF was in the center because now, the angle of the driver's seat isn't comfortable for DH (but I primarily drive it). It's workable and will be just fine when we switch it when DS is 2 in March. But, I'd suggest going to BRU to try them out--we were either getting the TF or the Graco MyRide but I liked the TF better...it's just not the best fit in the world.
BTW--we do have leather seats as well and it took a lot of extra weight/pressure to help it get tight enough but it can be done
