I'm not very creative but does guacamole count? I have been craving it all week and enhaled practically an entire bowl on my own when we went out for mexican last night!
Bruschetta sounds yummy too!
Now I want to stop at the store so I can make both at home!

... we love acorn squash cut in half and then baked with some butter in the middle and a slice of bacon. It's so yummy this time of year.

<a href="http://s279.photobucket.com/albums/kk121/behapybride/?action=viewMy best advice for veggies is to cook them, because it's easier to eat much more that way than you would eat raw. I like salad too as a supplement, but it's hard to get all your servings that way.
Some ideas: spinach lasagna, veggie fajitas or burritos (with corn, peppers, onions, zucchini), soup (e.g. minestrone or butternut squash bisque), Indian food (look up recipe for Indian-style spinach or eggplant curries), eggplant parmesan, broccoli stir fries, cabbage slaws... I also like a simple side of sauteed greens or oven roasted broccoli, but I know not everyone enjoys that.

I'm struggling with eating veggies. I try to make recipes that have veggies mixed in, like a quiche with kale.
My fav fall veggie recipe (which is really not very healthy haha) is creamed brussels sprouts. I basically brown brussel sprouts in butter for a bit, pour some heavy cream over them, let that reduce for a little bit, and then add a squeeze of fresh lemon at the end. Soooo delicious. You could totally make a healthier version too, just saute in olive oil and forgo the cream.
Roasted fall veggies in the oven are good too - turnips, rutabagas, carrots, sweet potatoes - just tossed in oil and baked. Yum....

I'm also always down for steamed spinach and baked zucchini with a little garlic salt, pepper and parm. You could try doing smoothies as well, sneaking in some veggies here and there. Have you ever tried V8? Lastly, soup is always a great idea. Broccoli cheese? I do crock-pot minestrone that is basically all veggies and some beans. DH did this with brussels sprouts last week and they were delicious!
I do a lot of roasting...everything taste better roasted! This includes root vegetables, broccoli, brussels sprouts, zucchini, beets, carrots, asparagus. (Note - if you cook different veggies at same time, they may cook at different rates). For any of these, I cut them into similar-size pieces, toss with olive oil and salt and pepper, and roast on a cookie sheet at around 375 until roasted/yummy. An alternate fatty idea is to cook a few pieces of bacon, and toss the veggies with bacon pieces before roasting. This is especially delicious with brussels sprouts!
For squash (like butternut or acorn), I throw the whole darn thing in the oven (again at 375) until it is soft/pierces easily with a fork (usually 30-45 mins), then take it out, let it cool a little, cut it in half and remove the seeds. Serve with butter/olive oil and a little parmesan cheese! So good.
I love veggies, but my husband hates them so I have to be inventive. You can hide cauliflower in mashed potatoes - my DH had NO IDEA (and still doesn't) - and it was really light and fluffy.
Steamed or boiled french green beans are really yummy and easy, cook only a few minutes to keep them crunchy. Then add olive oil and salt, sometimes I add balsamic and garlic. Same for broccoli.
This sounds gross but I swear it's good - buy fresh kale. Clean with water and break into small bite-size pieces. Take off the firm stems. Coat with olive oil, salt, grated parmesean cheese (and any other spices - garlic, pepper, etc). Bake in the oven on baking sheet for appx 15 min. You have homemade kale chips. Even DH ate these.

Also, one of my DH's favorite and most requested veggie recipes is Cauliflower au gratin. Basically, I will core a whole head of cauliflower (or you can cut it up, just keep the pieces larger) and microwave it for about 5-8 minutes depending on how big it is. You want it to be kinda cooked, because it will cook the rest of the way in the oven. Then you make a cheese sauce- start with a roux (equal parts butter and flour), for every 2 TBLs of butter/flour, use a cup and half of milk. Once that starts thickening, add your cheese. Whatever kind you like, shredded. For this dish, I usually use white cheddar. Once it's thick and bubbly, pour over your cauliflower in a deep casserole dish and bake about 20 minutes at 375, or til the top is nice and brown and the sauce is bubbly hot cheesy magma! Let it rest about 5 minutes to thicken/ cool then serve it up. Goes great with a roast (chicken, pork, beef, whatever)!
Also, creamed spinach- or even just sauteed spinach, kale, chard, or beet greens are a huge hit in our house.
When I'm in the mood, I make a green smoothie. I usually use spinach as the base because you really can't taste it. I blend that with water first, until I basically get green water, then throw in frozen fruit, protein powder, chia seeds, or anything else that sounds good (peanut butter, etc). I add ice and some more water and blend...voila. A tip: fresh avocado or banana makes it creamy
I should actually make one right now, since all I've eaten today is starch!
