Now that DS is 3 months, eating faster and staying up longer between naps, I'm struggling to find things to do to keep him entertained. We read stories, sing songs, he plays on the play mat, we "chat" - but after all of that, only an hour has gone by, and he is usually up for about 2 hours in between each nap. Sometimes he doesn't mind just sitting here quietly with me, but I feel like I should be doing "something" with him to keep him stimulated.
What do you do with your LO to keep them "entertained" for 6 or 7 hours a day?

I think as they age, they'll like more variety.
I have a Baby Einstein play gym which she loves and she spends some time there every day. I also talk to her and make faces a lot. She does some tummy time a few times a day as well.
I take her for walks and out for errands, but she usually sleeps during that rather than being entertained.
We move from one place to another.. lap to play mat, play mat to bumbo, bumbo to little reclined chair, chair to play mat for tummy time, back onto my lap/chest for some snuggles, up to her room to spend time in there.
Sometimes we're singing little nursery rhymes, babbling, making silly faces. Sometimes she's batting at toys on her own while I load the dishwasher or change the load of laundry. And when i'm really struggling to find something, we go for a walk.. which she never sleeps through as our sidewalks are really bumpy.
I do the same things you do too and have wondered if it is enough as well, so I have no real answers. Maybe take them somewhere new so they have something new to look at? But someone posted this link somewhere that was an interesting read (liked the video at the bottom as well) about the benefits of just leaving them be to explore their own thoughts/ surroundings:

This is just one of many takes on how to interact with a babe, so I wouldn't necessarily take it completely on board 100%, but it was an interesting perspective nevertheless.

I just started using the bumbo seat (supervised, it's always on the floor and for about 5 minutes tops)
I have an activity gym that he stays in for about 10 minutes.
I have a few books that I read to him.
Sing songs while changing his diaper or just laying down.
He is mesmerized by the TV so we let him watch that a little.
Tummy time a few times a day.
He also loves his swing but ends up sleeping on it all the time.

Say I'm folding laundry, I fold it on the floor with him in his bouncey seat and just chat with him and smile and play peekaboo with the clothes and what not. If I am crafting (my hobby), then I put him somewhere where he can see me and I can talk to him and let him hang out as long as he is happy. If he fusses of course I soothe him though.
