Favorite Easy Recipes

What is your favorite quick dinner recipe right now? 

I am loving this curry pot pie (and I don't even like pot pie):https://www.foodnetwork.com/recipes/alton-brown/curry-chicken-pot-pie-recipe/index.html  I use leftover Costco rotisserie chicken and skip the step for roasting the frozen veggies in the oven (it didn't seem to make a difference in flavor when I did).  So easy and delicious!

  • These Chipotle Shrimp Tostadas were very tasty and easy.  They would have been even easier if I would have used the preshredded slaw mix and had them on taco shells instead of frying the corn tortillas.

  • It really depends what I'm in the mood for. My all-time favorite is probably chicken tortellini though.  I take cooked frozen cheese tortellini, make a quick parmesan cheese sauce, throw in some shredded chicken (I always have a few cups in the freezer!), and chopped prosccuitto, diced ham or cooke bacon roughly chopped.

    Boiling the water is the longest part! 

  • I love this thread. Waterfall, that pot pie recipe sounds good! Especially the part about using leftover costco rotisserie chicken. We get those fairly regularly and I love all the meals it gets used for.

    Ooh, that looks really really good! lovelovelovelove, weren't you the one who recommended the Glory Bowl several months back? I've made that several times since and it's delicious! You seem to have lots of great recipes...and clearly good taste in food :)

    Yes! That was me. :) I love Glory Bowls - I eat them at least once a week. 
    I love food. Local, organic, good food. I'm not a vegetarian, but never personally cook meat, so I scour the internet for appealing dishes. The braised coconut spinach doesn't disappoint!

    ETA: Chuicafina - I've started swapping out the spinach and using fresh sunflower sprouts instead. I highly recommend you try them next time you make a Glory Bowl.

  • I made this earlier this week, super easy and turned out great.

     8oz Egg Noodles
    1 1/4 cup cottage cheese
    1/2 cup sour cream
    1 cup cheddar cheese
    1 lbs ground beef
    1 can tomato sauce

     Mix sour cream/cottage cheese.  Brown meat, add tomato sauce.  Cook noodles.  Mix noodles sour cream/cottage cheese mixture.  Add half to the bottom of baking dish, cover with half beef/tomato mixture, cover with ceddar cheese.  Repeat.  Bake for 20 minutes

    We do it in different ways.Taco seasoning and shredded cheese, spaghetti sauce like they say, we've even done broccoli, cooked chicken, and cream of mushroom soup.

    Last night we did one stick of butter, a cut up lemon, a lb of frozen shrimp, and half a packet of italian seasoning. Bake for 15 minutes. We served over pasta, it was so good!

    Also - spicy honey chicken thighs - https://www.ourbestbites.com/2008/06/spicy-honey-chicken/ Thighs are so cheap, and we just keep a jar of this seasoning made to use whenever. Super quick under the broiler, and so moist and juicy!

  • Just made this last night, and it was great!  Just mix about 1/2# pasta, a can of diced tomatoes w/onion, and about 1/2 jar of prepared pesto.  I also added some cooked, seasoned hamburger that I had in the freezer.  Top with parm or mozz if desired. 

    I also like to make a taco cornbread bake.  Just layer taco meat (sometimes I mix in black beans, corn etc), shredded cheese, and prepared Jiffy corn muffin batter in a casserole dish.  Bake until cornbread layer is cooked through.  Top with salsa and sour cream.
