Re: What's Cookin' Wednesday- crock pot!
This recipe works in any season, but it is my favorite crock pot recipe! Pulled pork with a delicious spice rub. And this link is to a nesties blog (met on the GP board) so there's those points for keeping it in the family too, right?
Recipe.

Another big fan of crockpot bulled pork here! We make it and take it to the ski mountain for lunch all winter long.
The other day we did corned beef in the crockpot: literally just put the meet and contents of the package in the pot, add a Guinness, and let it cook. It's that easy, and tastes better than any other homemade corned beef I've ever had.
"Candy chicken" is also a big hit around our house: https://crockpot365.blogspot.com/2008/08/crockpot-brown-sugar-chicken-recipe.html. I use the Splenda brown sugar mix instead of straight brown sugar, and it still turns out great.
My favorite, though, is this cranberry pork roast: https://crockpot365.blogspot.com/2009/02/crockpot-cranberry-pork-roast.html. Too bad I'm the only one in my family who really loved it (my husband liked it, but wasn't crazy about it because he likes his pork rare), because I don't make it often.
Yum! I'm going to have to try this!
A classic from my cooking blog! So easy and so YUM! Chicken Dumplings!

Crock pot chicken breasts
Mix 1 tsp each of salt, pepper, oregano, and garlic powder. Sprinkle over 4 chicken breasts. Brown 3-5 minutes each side in 3 Tbsp butter/margarine. Toss into crock pot.
Mix 1/4 c water, 1 tsp garlic powder, 3 Tbsp lemon juice and pour into pan used to brown chicken. Scrape up bits, bring to boil, and add to crock pot. Cook on low 6 h or high 3 h.

Except I add corn and other ingredients to give it more color. Love chili in the fall, even if it doesn't feel like fall here EVER (said the Midwest girl living in CA)
I am big on the chicken w/salsa and seasoning too.. perfect for enchiladas, tacos, rice, etc...
A recent favorite that I made for a new mom is what I call Cafeteria Spaghetti.... I tend to be a traditionalist w/Italian food (grew up spoiled on great homemade Italian food) but this is a hit... but it's not real "Italian". It's also great w/o meat.
1 pound lean ground beef
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder or salt
3 jars 26 ounce pasta sauce
1 pound spaghetti noodles
1/2 cup Parmesan Cheese
4 ounces cream cheese
1-2 cups chicken broth
1. Cook/brown beef into a medium skillet over medium heat until crumbled and browned Season with salt, pepper and garlic powder. Drain fat from pan if necessary.
2. Pour one jar of pasta sauce into bottom of crock pot on high heat. Break spaghetti noodles in half and place noodles over sauce. Pour cooked beef over noodles, sprinkle with Parmesan cheese and top with cubes of cream cheese. Pour another jar of pasta over cream cheese, close lid and let cook on high for 3 hours. After 3 hours, give a good stir (will be thick) and add last jar of pasta sauce and 1-2 cups of chicken broth (more if you want a thinner sauce). Close lid and let cook another hour or until ready to serve.
