Crustless Quiche
1 cup chopped onion
1 cup sliced mushrooms
1 pkg (10 oz) frozen spinach, thawed and drained
2/3 cup cooked ham
5 eggs
3 cups shredded Monterey Jack cheese
Saute the onion and mushrooms in 1 TB oil until soft. Add spinach and ham, and cook until most of the moisture is gone, stirring frequently. Let cool slightly. Beat the eggs and mix in the cheese. Add veggie mixture. Bake in a greased pan (I use a 9x9 Pyrex dish) at 350 for 40-45 minutes.
You could probably sub in whatever veggies you wanted if you aren't a mushroom and spinach girl. Even my kids love this one, and my 2yo insists she hates spinach
