Toddlers: 12 - 24 Months

Help! I'm having a caramel apple emergency!

Has anyone ever made caramel apples?  Or do we have any chefs here?  I'm trying to make some as favors for DS's bday party tomorrow and it's going horribly.  I don't have a candy thermometer so I'm having to rely on this test where you drop the caramel into water and then feel it.  I have no idea if it's at the soft ball stage or not.  I thought so, but I just tried dipping an apple and the caramel is lumpy with specks of dark stuff in it.  I have no idea what that is.  All the ingredients were liquid except the sugar.  It looks gross, not like the smooth clear caramel on apples that I'm used to..  What am I doing wrong?

  • I've done it both ways and it's sooooo much easier with a candy thermometer.  They're cheap too - around $5 - and sold in just about every grocery store.  Or, you can go the super easy route and just buy caramel candies and melt those.

  • Kraft makes Caramel squares meant for melting. The are individually wrapped. Unwrap and melt with a tablespoon of water. It works perfectly! They are located near the apples at this time of year, or on the candy isle or baking isle. I think they come with the sticks in the bag too.
  • Oh my gosh.  That sounds like a lot of work.  They make these caramel wraps sold by the apples at Walmart.  You just lay the apple on it, wrap it up, microwave it for a few seconds, and stick a stick in it.  I made them all AT SCHOOL with the kids sitting there waiting for 20 fourth graders as a prize one day.  I would go that route if you haven't already finished them. :)

    Whoah I wish I had known about this!  And the caramel wrappers the other PP mentioned!  I definitely went the most difficult route.  As it turns out, I poured the caramel through a strainer and all this gritty gunk stayed behind.  There was a little left in the caramel, but overall it looked much better.  The apples didn't look as shiny and pretty as you normally see, but I'm sure the kids didn't really care!  I made a super cute little sack for each one made out of burlap and tied with ribbons with tractors on it.  So my decorating made up for the ugly apples.
