For Father's Day I made DH an alphabet book from DS with pictures of things they have done together/ shared together, etc. Coming up with words for each letter was really hard so I know how you feel right now! Most of the letters were things that were specific to DH and DS like F is for football, R is for Redskins, etc. But some words I used that could work for you are:
I is for iphone... if you have one .  I had pics of DS playing with my phone.
.  I had pics of DS playing with my phone.
Q is for quack. We have a ton of rubber duckies and several books that have ducks so these pictures were easy.
Y is for yogurt- we already had a billion pics of him eating yogurt!
Z is for Zzzzzs- sleeping. I wish we had pics of the zoo but we've never taken him to the zoo! But we had lots of pics of him sleeping!
Have fun with it!

I've already done these for my two older girls and plan to do one for DD3 for Christmas. I also use all her aunts/uncles/cousins (started out small for DD1 because it was my 3 siblings and DH's 2 siblings - no one was married yet! Now they are all married and there are a few cousins). Anyway, if your family isn't too big you might consider that. Some of the aunts/uncles aren't local so it's a nice way to show who they are since we don't see them all the time.
f - family (family pic), fingerpaint, farm, fourth of july, flowers
g - grandparents, glasses, grass, glow worm
i - ice cream, icing (1st bday pic), instruments
j - I just used uncle's names
k - kisses, kicking (a ball), kitchen (play kitchen)
l - laughing, leaves (fall leaf pile), laundry (DD in the clean clothes basket)
o - outside, overalls, ocean, ouch (DD with a cut on her forehead)
q - quarterback (DD holding mini football like she was about to throw it), quack
r - reading, remote control, running, rocking horse
u - up-in-the-air (being tossed up high), upside down, unhappy
v - valentine (DD with an "I love you" balloon), vegetable
x - xylophone, eXersaucer
y - yogurt, yawn
z - zzzz's (sleep), zoo
My friend did this with her DD and it turned out AWESOME!!
Here is what she did for the letters you're missing:
F- Fish
G- Giants (As in the baseball team)
I- Ice Cream
J- Juice box
K- Koala
L- Lollipop
O - overalls
Q - Quiet (her DD was saying "shhhh")
R - rocks
U- Umbrella
V- DD's name
X- XOXO (her DD kissing a baby doll)
Y- Yellow (her DD holding a bunch of yellow balloons)
Z- Zebra
Good luck! I'm hoping to do something like this at some point when DS is about a year older than now. It's such a cute idea!
