I am a teacher and just went back to work last week. It was easy over the summer making lunch for DS because I could just make whatever we had around.
Now that I have to pack his lunch, I am having a hard time. I have done PB&J or Mac & cheese as the main meal with yogurt, goldfish, and fruit as sides.
What else do you find quick and easy to send to the babysitter with your child? I don't want him to get sick of eating the same thing every day. He is a GREAT eater and the only thing he doesn't eat a lot of right now is meat (chicken). I was thinking I could do turkey, cheese, and bread at times. I just don't know...
TIA!
Re: Lunch Ideas....please help
That sucks that you have to pack his lunch! Could you send things for her to make? Chicken nuggets, hot dogs, fish sticks, meat balls, quasidillas? Sometimes I do a quick lunch like fruit cup, nutra grain bar
We do a lot of soup... make a batch on weekends and jar it and freeze and the babysitters, heats and serves
-Hard boiled eggs and home made waffles are usually a hit with us as well
-Quesadilla too
I freeze meals in small glass containers and my DH heats them and feeds them to DD at lunch time. I prepare a large batch of something each weekend, feed it to my DD for lunch or dinner and freeze the rest. She has good, healthy food and my DH has a convienent choice. Some of DD's favorites are:
oatmeal: I use the 1 - minute kind and add a bunch of frozen blueberries (or other fruit). I sweeten it with cherry puree, but you wouldn't have to do that.
pasta: I cook ditalini pasta with shoestring carrots, peas and any other veggies I feel like adding. I puree some spinach and add it to pasta sauce along with some grilled chicken.
rice: I cook brown rice, chicken stock and mixed frozen veggies in my rice cooker. I make a "sauce" with pureed spinach and pureed zuchinni. I add in cooked, seasoned chicken or beef and DD loves it.
