Easy frosting recipe anyone? Party tomorrow! :)

Anyone have a quick frosting recipe to share?  Having a party for my three year old tomorrow, followed by one for my one year old and still have tons to do.  Yikes!

    My sugar cookie frosting recipe is super simple, just powdered sugar, 1/2 tsp vanilla, and milk (sugar and milk in whatever quantities get you as much as you need at the consistency you want.  Never used it for cake though.


    I use the same recipe for sugar cookies.  I bet if you made it a little thinner without it being runny it would be great on a cake.

    If you are too pressed for time just buy a can at the grocery store.  I did see the other day that they have frosting mixes where you buy a plain frosting and you can add flavors (like caramel) to it so you have caramel frosting.

  • The Joy of Cooking has a great easy recipe for cake icing.

    Cream 1 stick butter at room temperature. Add 1lb sifted confectioner's sugar mix well with mixer. Add 1 tsp vanilla and 4 TBSP milk. Cream until smooth.   If the mixture is too thick add another TBSP milk.  (Up to 6 TBSP of milk TOTAL)  

    They mention that if it seems to thin, it will "set up" a bit so don't added more confectioner's sugar too quickly. 


     

  • We are making R's cake for his birthday party and did a trial run with everything this past weekend.

    We're super picky about trans fats, and most of the store-bought icing has them, so we preferred to make the icing ourselves for this reason. 

  • Do you have a standing mixer? If you do, it's incredibly easy to make buttercream frosting (if you don't, it's still easy but you have to hold the mixer for a while). It only has four ingredients for the basic vanilla version: butter, cream, powdered sugar, and vanilla. I don't have the recipe on me but can post it later if you want.  I got it out of the Mark Bittman How to Cook Everything (or maybe the vegetarian version of this cookbook) if you have that one. It's the same kind of basic frosting that they use at most fancy cupcake bakeries.

    ETA: found this online-- seems to be the same recipe. There are also other versions (chocolate, etc.).
