anyone have a great chicken salad recipe?

I've never made it, but that is what I tend to get from the work cafeteria when I don't bring lunch, so I figured I should probably give it a go. Any favorites?

  • I don't have a recipe per se, but I just chop/shred a breast or two (depending on how much I want to make), throw in enough mayo for it to be moist and worked together well, add a bunch of dill, some chopped up scallion or onion, a bit of garlic, and then some salt and pepper. Taste and adjust. You can also throw in chopped celery or pickles or olives or capers, depending on what you like. Make it the night before if possible, because the time in the fridge lets the flavors meld.

  • I do not have a recipe, more of an eyeball it thing. I cut up chicken breast into chunks (I like chunky chicken salad) and put it in a bowl with celery pieces, halved grapes, and chopped walnuts. I put just enough mayo to coat and add salt and pepper to taste.

    I add dried cranberries and use fresh tarragon (3 tablespoons).  I only add the sour cream and mayo mixture to taste, because how much you need depends on how much chicken you end up with.

    I used the can chunks from traders CHICKEN in water and I am lazy and throw it in the Cuisinart to chop it well ( finer for them ) and then add mayo and a bit of greek yogurt ( so I use less mayo ) a lil pepper and  that is how they like it .. I do the same sans the greek yo and add a bit of chopped celery

  • we similarily do not use a recipe.  We like to add golden or regular raisins, curry powder, and toasted almonds in addition to mayo, celery, onion, salt and pepper.
  • I just had homemade chicken salad for lunch today! I make this all the time and I get rave reviews:

     Grilled chicken 

    Red grapes (cut in half)

    Chopped celery

    Sliced almonds

    Brianna's Poppyseed Dressing

     Toss them together (use whatever amount you like) and voila! So good!

  • Yup--chunks of chicken (poached works well).  chopped walnuts, grapes, apples!, sunflower seeds, whatever....  I coat with yogurt because I hate mayo.  Squeeze a lemon or two.

    Oh yeah, +1 on poaching the chicken.  It's a super simple cooking method and keeps chicken breasts fairly moist.  I just learned how to do it correctly recently!
