I am posting on the High-risk board with my GD questions, and learning a lot so thanks for that recommendation. What I'm finding is that if I follow the GD meal plans I've found, or even adapt something out there to my vegetarian lifestyle I'm only getting about 2200 Calories. My goal is between 3000-4000 calories according to my nutritionist and dr luke. Has anyone run into this before? I'm meeting with a Certified Gestational Diebetes Educator on Friday, so maybe she can help. OR--can someone tell me that eating two few calories for a week won't significantly effect my girls? I just can't help thinking that being irritable and hungry all the time isn't the right way to go about a pregnancy. :-( I know GD is a serious issue, but so is calorie intake and I can't seem to balance them well.

Definitely discuss all of your calorie concerns with a nutritionist just for ideas. If avocados, nuts, and cheese are on your safelist, make sure you always have them around. I haven't had my GB test yet, but I am a sugar-free mom and I avoid most empty starches - so I am also trying to meet really high calorie goals without getting them from sugars and breads. I try to put avocado/guac on everything and anything, because the quality fats in it help give me little boosts. Even if I feel like I can't eat anything, I can usually handle one more string cheese. If I feel a little nauseous in the mornings, I eat a handful of peanuts or sunflower seeds. If they tell you that you can eat lentils (a bit starchy, but low in sugar and super high in protein and fiber), get your fill on them.

Your diabetes educator should definitely be able to help with your meal plans. My nutritionist/diabetes educator put together personalized meal plans for me to include the foods I prefer, and these meal plans worked much better for me than the random ones I found on the internet. But, that being said, I did not follow Dr. Luke (only some of her recommendations) and I did not pay attention to calories, just carbs in the GD diet.
Ditto pp who suggested cheese, nuts, and avocado for more calorie-dense food. I just discovered the wonder of mixed nuts (recommended by my diabetes educator) -- they keep me fuller longer and my blood sugar levels have improved since I started including them in my diet. Last pregnancy, I leaned heavily on peanut butter.
It was near impossible to get enough calories with my GD diet. The RD I went to pretty much told they doc the carb counts he wanted were too low and to put me on insulin. We used low doses and comboed the insulin with a revised diet to make sugar numbers and weight goals. It wasn't an easy process but it can be done.
I would start a food diary right now, with blood sugar numbers. It will help your dietitician help you more effectively.
