Toddlers: 24 Months+

cupcakes for party

I need to make 3 doz for DS's 3rd bday Sat. I'm going to make, bake, and ice on Friday night. In the chaos of having family in town, SIL having a baby yesterday, and my crazy kids, I'm halfway tempted to use a box mix but I'm considering making from scratch. 

Does anyone have a favorite recipe? I want chocolate. I found one on pintrest that had a brownie inside the cupcake (YUM!) but probably too rich for the occassion.

Then theres the issue of how to decorate. I bought plastic farm animals from the dollar store (party is at a petting zoo), so at first I thought I'd dye vanilla icing green, or dye coconut flakes green to look like grass. Or I could just do chocolate icing instead.  Thoughts?

  • I don't have a chocolate cake recipe but think you should dye the frosting rather than coloring coconut.  In my experiences a lot of people do not like coconut.  Good luck.  By the way, I have found that box cake mixes are pretty good and if I was going to choose between frosting or cake to use store bought/boxed, I would use boxed cake and home made frosting.
