Quinoa & sweet potato chili with baked polenta fries
Pasta with spinach and white beans
Mini mexican pizzas w/ the leftover quinoa & sweet potato chili
LOVE Breakfast for dinner! Also, polenta fries are intriguing....I've only had polenta a couple times and haven't liked the texture, but as fries it sounds so good!
Ugh, I've tried to comment back all afternoon. Mobile Bump is the pits!
mbgreenwalt- I'm so jealous that you get fair food this weekend. Our state fair isn't until October.
smwiggle- Care to share your fried rice recipe?
I dice carrots (1 large), onions (half), potatoes (2 med), and some kind of meat (normally ham or chicken) really small and sautee in sesame seed oil. When the meat is cooked through and the potatoes are soft, I add about 4 cups cooked rice and enough soy sauce to give the rice a very light brown tint (I honestly can't give you an estimate of how much I use, but I would say stay on the conservative side and then slowly add more for taste). Sometimes I will add frozen peas or scrambled eggs at the end. I let it all cook together for about 5 minutes stirring occasionally.
