I have no idea what I want to make for dinner with in these next 2 weeks. So WFD ladies? Maybe what you are having will give me some ideas since I put off grocery shopping until today since I felt like crap last night.
Pulled pork with sweet plantains and Goya black bean rice. This is a favorite of ours and so easy too!
Buy a few pounds of pork we buy like 8 and then have lots of leftovers, shoulder/butt cut. Add 1/4 cup apple cider vinegar, a whole cluster of garlic minced up, we use a microplane to mince really easy, and 1 to 2 tablespoons of salt, you can always add more later. Put it all in the crockpot on low for 8 to 12 hours, the longer the better, we just put it in before work in the morning.
For the plantains you buy them a few days before when the skins are yellow and then let them sit on the counter until skins turn black. when you're ready to serve the pork you cut the plantains on an angle about 1/4 inch thick and fry them in some olive oil.
It's actually a super easy meal. If you like BBQ pulled pork then you can just add BBQ sauce to the finished product and serve the pork on rolls.

Found the recipe from a pin - I would try it with greek yogurt instead of mayo next time. It was really yummy per the recipe though!

This is me. It's almost 10 here and Isaac is in bed. My SO is not home yet. I needed to laundry and clean today but instead I napped and went to my mommy and me playdate.
This week we had grilled chicken with baked sweet potatoes and steamed broccoli, pot roast (in the crockpot), and spaghetti w/ bolognese sauce.
I make the bolognese sauce myself, with ground beef, onion, garlic, spinach, mushrooms and red pepper. First, cut all the vegetables really finely. Brown the gr.beef, and add the vegetables and 1/4c red wine. When the vegetables start softening up, add one can of chopped tomatoes and 1 tbsp of tomato paste. Simmer over low heat for at least 10-15 minutes. Then enjoy with spaghetti or your pasta of choice!
(Alternatively, you can brown the gr beef and then just dump everything in the crockpot, on high for 3 hours. Which is what I usually do, if I remember to put it together at lunch time...then it's ready when DH is home from work.)
Stupid ?..What's the difference between bolognese sauce and regular spaghetti sauce. I always thought it was almost the same. I guess reg doesn't have wine. I will have to try it.

Smoked (Barbecued) Turkey breast chopped on a baked potato with chives and jalapenos. So Delish!
I like having fresh green beans steamed with a little magic dust spice on them. Yum!
