gluten free food?

I need to prepare some meals that freeze to take up to my friend this weekend. Her son is allergic to gluten sooo I'm at a bit of a loss because my go to meals are usually pasta or don't freeze well.

So far I have chicken soup with rice. Any other suggestions? The easier the better

Re: gluten free food?

  • Oh my. That would be really tough! I second Sweetpea's suggestion to go to the "G" free section of your store and double check all the labels. Gluten has a way of sneaking into lots of foods!

  • I may cop out and just buy her some pre-made meals at Wegmans.

  • I love Wegmans. The first one in our state opened 15 minutes from my house. Yum.

Oh and gluten free enchiladas are delicious. I don't have a specific recipe, but google has a bunch.

  • I have to eat gluten free. I am at work so don't have specific recipes here but you can usually google gluten free recipes and find some good ones. If you are going to cook just be careful for contamination from gluten in your kitchen. You can feel free to ask me any questions. I will be back on here tonight.
