Too hot to cook: What does LO get for meals?

 Much like the rest of the country, it's been very hot here and in the evenings I really don't want to go near my kitchen. It's one thing if I just have cereal or grab a pizza for dinner, but I'm running out of ideas for DS. Pizza is the first food I've found that he doesn't like, and I really don't want to give him fast food. Dinner is when he usually gets meat/protein.

What are you ladies not cooking for your LOs?

  • I'll pick up a rotisserie chicken from Walmart or Food Lion to make sandwiches, and just shred some chicken for DS. I'll dice some avocado for a side for him.

  • Lil Man just eats what daddy or I eat. But usually when we eat out we get roast chicken or pasta something like that.

  • what about scrambled eggs? or cooking pasta in the microwave? tofu?
  • We sliced up some deli meat and cheese a lot for DS since he can't really eat a sandwhich. We would also cook pasta in the microwave or sometimes do hot dogs or something (I know it's not too healthy but it was 100+ here for 3 weeks).
  • I often find things in the prepare food section of our grocery store (meatballs, pasta dishes, potatos, cooked veggies that are chilled).  She eats cheese slices (cut up) and lots of fruit and yogurt.  She likes cold pizza (we grill at home so healthier) too.

  • When it was hot here, I was making a lot of black bean/corn/avocado dip and eating it with tortillas or chips.  Just throw a can of black beans, some frozen corn, diced avocado and salsa together.  Add a sprig of cilantro and wedge of lime and you've got dinner.

    We also do hummus and pita or BLT's with cottage cheese when it's hot outside.

  • Lately I've discovered that LO loves beans- black or pinto.  I know some people are leery of the salt in canned food, but I rinse them very well.  That's an idea for protein that doesn't have to be cooked...
