4-5 medium russet baked potatoes (allow time to cool)
2/3 c butter
6 c milk (2% works great)
*2/3 c flour
*1 tsp chicken bouillon
*1/4 tsp salt
*1/2 tsp pepper
4 green onions-finely chopped
10-12 slices of bacon (or turkey bacon)
8 oz shredded cheddar cheese
* mix the dry ingredients into a small bowl. You'll want to have it ready to throw in at once.
-Discard skin from potatoes and chop into bite size pieces. Melt butter in large pot on medium heat. Gradually add dry ingredients to melted butter. Use whisk to create a creamy/smooth texture. You may need to start adding a little milk if it is too dry. Cook 1 minute stirring constantly. Gradually add milk and cook on medium heat. Add potatoes, onions, 1 cup (or more if you like it cheesy) cheese and 1/2 cooked bacon-crumbled. Cook until well heated and soup is creamy. Add extra milk if needed.
Serve in favorite soup bowl with remaining bacon, onions and cheese. Sour cream on top if desired. Serves 6-8.
Hands down best potato soup. It took me several tries to get it right but well worth it. It's always a hit and the recipe is often asked for
