My DH has celiac and he travels for a living. He is gone 2-4 days and home 2-4 days. Becaue of his special diet (gluten free) I pack all of his meals, which means on a 4 day trip, I pack 12 meals and 4 snacks worth of food. We've been doing this for years... Here's my problem, I feel like I don't send him with enough fruits and veggies. Sure I put an apple, celery with peanut butter, carrots in there but there isn't alot of greens in his meals. Anyone have any suggestions on meals that are or that I can convert to G-Free where I can sneak in some more fruits and veggies?

Roasts in the crockpot -- beef, mushrooms, potatoes, carrots, celery, onion, etc.
You can hide any kind of root vegetable or tough green in Minestrone soup and just omit pasta.
Chili -- beans, meat, peppers, onions, squash, corn... Make it your own.
Send strawberries, cut melons, blueberries, apples, nectarines, peaches, pears, oranges, etc.
We eat gluten free for DS2's eczema, and DH is a big supporter of eating in line with the Paleo diet. We eat GF as in no substitutes, we just avoid anything that originally was a gluten product.
DH and I are gluten free and one thing I love to put in his lunches is a quinoa salad.
It's just quinoa which is a great grain that is full of fiber and protein, and I add any veggie in the house to it. One of his favorite combinations; tomatoes, avocado, black beans, onion, cucumber and I pack a little bit of salsa or balsamic dressing and her loves it.
