NAR: Dinner

Ok, I am totally burnt out on cooking. We are tired of the normal. Anything new I try and make is a disaster.

What is your easy dinner go to ?

  • can 'o pizza dough, pepperoni, cheese

    roll into log, bake at 350 for 30-45 mins. I'm not saying it's healthy, but I am saying pizza rolls.

    Mar '12: Homestudy interrupted by change in Uganda requirements - where do we go from here?
    After searching and searching, back with Uganda but with our homestudy agency's program.
    Homestudy complete July 19
    USCIS I-600A submitted July 20. Biometrics appointments arrived Aug 17; fingerprinted Aug 21; 171H received Sept 25th. On the wait list Oct 1st: #18. By Jan 25th, we're #13!

  • Lazy chicken... frozen chicken breasts, lots of spices, 30 minutes in the oven @350, then flip and do another 20-30 minutes... done!  The spices I use are in a recent blog post, but really any spices will do Big Smile

  • Zucchini Quiche: so quick, easy and yummy! Only 5 ingredients, 2 dirty dishes, and even Cohen eats it.

    Line a pie pan with pillsbury crescent rolls and rub on a light layer of spicy/brown mustard. Bake on 350 till slightly brown while you make the filling. When you take it out, squish the puffy part down with a spoon to make room for the filling.  

    Filling:

    slice 3 small to medium zucchini (peeled or unpeeled) and microwave until tender with a pat of butter. Add 1 cup of mozzarella, 4 eggs and salt/pepper to the zucchini in same bowl. 

    Mix and quickly pour into crust. Bake approx 30 mins on 350, or until toothpick comes out clean. 

    Recipe can be easily doubled for parties/company.

  • Turkey scramble over rice.  
    I brown turkey w/onions and whatever veggies I have on hand.  Sometimes it's just diced tomatoes... other times mushrooms and zucchini.  It's always yummy.  I season w/thyme if I add mushrooms or oregano if it's just tomatos.  Garlic and basil are also good additions. 

     Or my ultimate easy...

    A can of Amy's Organic chili over baked potato w/a little cheese and sour cream. 

     Another suggestion --- I usually cook enough to freeze half.  That makes weeknights esp easy during the school year (hubby is a teacher).


    Oh, my other fave go to right is a good chicken salad w/yummy lettuces, avocado, grapes, pistachios (sp) and a good dressing.  My favorite way to do a bottled dressing is to mix half poppy seed w/half balsamic vinegarette and some water to lighten it up... perfect over the above ingredients.

  • I usually keep some homemade pizza dough in the freezer so I can pull that out for an easy dinner. If we have a lot of vegetables to use up I'll just make a stir fry over instant brown rice or roast them all together and toss with whole wheat pasta. Ground chicken or turkey is one of our favorites too- add some beans for chili, w/ taco-ish seasonings over brown rice, or some spiced turkey meatballs over couscous (I think that's a Martha Stewart recipe). We keep some frozen salmon in the freezer too that can be baked with some mustard and panko breadcrumbs and then roast some vegetables with it and some instant brown rice or whole wheat couscous on the side. Sometimes I'll poach several chicken breasts early in the week and shred them so the chicken can be used later for chicken salad, pizza, on top of a green salad, tacos, etc. This post makes me sound like I have my life together. In reality, we end up ordering take-out a lot when I'm feeling lazy because it is just way too easy in NYC. But these are things I do cook when I still have some energy left, but not enough for an elaborate meal :)

  • Tuna and noodles!! My grandma always made it for us as kids, and I thought she slaved! Ha!

     Boil some noodles (I use egg noodles). Add some cream of mushroom. Toss in some veggies (I use the bags of frozen veggies, nuke them and toss them in), and then a couple cans of tuna. Boom. Done.
