I started working a couple of weeks ago and need ideas for lunch (having bagels every day isn't going to have a good outcome). I'm looking for ideas that are easy to prepare and will taste good cold. So things like salads and sandwiches, items of that nature.
Important note: I eat Kosher, so nothing that has meat and dairy together, please. That is also why the food will be cold- I can't use the same microwave as everyone else. TIA!

I try to pack things that I can prepare and have ready for a couple days at a time. Prepare lunches for Mon-Wed on Sunday and Thurs-Fri on Wed night. I chop the veggies and grill the chicken once a week. I'm not exactly knowledgable about the rules of Kosher, but here are some of my go-tos:
Carrots, green peppers, pita bread, hummus
Grilled chicken salads (lettuce, tomato, cucumbers, grilled chicken, dressing on the side)
Pesto pasta salad (pasta, mozzerella, cherry tomatoes, either fresh or canned pesto w/chicken)
Fresh fruit and yogurt with granola
Sorry, I'm not sure about Kosher, but this may be okay. I make a flat bread pizza and eat it cold. I do pesto, cheese, tomato, and artichoke. It's really good. I make it the night before and then just bring it in. You could even just make some pasta instead of the bread and keep a bunch in the refrigerator.
Also, if you buy stuff to make a salad, and chop it all up and have it ready to put together right after going to the store, it's easy to get together each day. I typically make more chicken for dinner to use in my salads the next day.
