Zucchini recipes?

Hi,

Looking for healthy zucchini recipes for the baby... Just picked up a bunch at the farmstand.  He's almost a year old and loves it pureed, but we're trying to get him to eat more on his own.

All the zucchini stuff I'm finding through google has a ton of sugar, nuts, chocolate chips, etc.  Looking for healthy stuff that perhaps I can freeze.  :)

Surgery December 2013 to remove a 10+cm fibroid... Open myomectomy. Benched for 3-9 months... 
Will TTC summer Summer 2014 we hope!

Dear God, Since I couldn't hold my little one in my lap and tell him about you, could you hold him in your lap and tell him about me?

  • What about zucchini tots? Shred them, add shredded cheese, a little bit of bread crumbs, spices of your choice and an egg. Bake in muffin tins at 350 for about 20 minutes. 

    I believe there is a more exact recipe on pinterest-- Or you could just roast or grill them with a little olive oil, salt and pepper and they will be delicious!

    Thanks all, especially brittas... they're in the oven right now, we'll see how they turn out!  I shredded in a small red onion with the zucchini, too, and drained them together.  YUM.  (Well, I HOPE yum...)

  • This pancake recipe is great and you can add any type of veggie and/or fruit purree to it:

    1 cup flour

    3 tsp baking powder

    1/2 tsp salt

    1/2 tsp cinnamon

    3/4 cup of milk

  • I just baked up a whole bunch of zucchini and cheese muffins for LO. It was eggs flour, olive oil, milk etc no sugar added. I am also going to saute it with carrots and beef and make her lasagna. LO doesnt like zucchini fries by themselves since they are too mushy. 
  • I just cut them up and saute them on the stove with a little olive oil or butter, garlic powder, and some lemon juice.  It is one of her favorite foods.

  • We saute them, roast them, or make zucchini pancakes out of them.  We also just had them in a stirfry last week.

  • One of our favorite side dishes is sauteed zucchini & squash.  It is overly simple (and similar to PP) but DD LOVES it! 

    Cut zucchini/sqash as desired.  Saute with olive oil, garlic, kosher salt, & pepper until browned.

  • I made 2 different things with mine... one was a sort of zucchini fritter.  I just took grated zucchini, egg, and some Bisquick mix and stirred it together with some seasonings.  I dropped spoon fulls in a skillet and cooked until browned.

    Then I made some breakfast pancakes with this recipe (sweet, but only 3tbsp sugar):
